Sweet potatoes are also a good source of Vitamin C, minerals like copper, manganese, zinc, phosphorus, magnesium, calcium, iron, potassium and B-vitamins like vitamin B-6, folic acid, and Vitamin B-5. 4 large sweet potatoes
2 pinches of sea salt
1/3 cup organic expeller pressed coconut oil
1 tbsp cinnamon
1 tsp of organic vanilla extract
3 tbsp of organic raw honey
1/2 cup purified water (if necessary)
Dried fruit (raisins, dried cranberries, and dried figs) optional
Add purified water to a large pot along with 2 pinches of sea salt. Add 3 large sweet potatoes to the pot and boil for 30 minutes. Strain sweet potatoes from water and let cool for about 30 minutes. Peel skin from sweet potato and place in a large bowl. Mash sweet potatoes with a masher using water if necessary to assist in mashing the potatoes. Then add the coconut oil, vanilla extract, raw honey, cinnamon, and dried fruit to top it off. Enjoy!
